Mojo means in Spanish “sauce” and is originated in the Canary Islands. There are two types of Mojos: Red Mojo (Mojo Rojo) and Green Mojo (Mojo Verde). Both sauces are served with potatoes, fish and meat. The Mojo Rojo is the hot sauce due to the ingredients, which is known as “Mojo Picón” in Spain. The main ingredients are garlic, paprika and chili.
Other countries have recipes similar to mojo, where ingredients such as lemon, orange or lime juice be used.
